Slow-roasted rosemary and garlic potatoes

Crisp outside, creamy inside, deeply herbal. The technique borrows from the Italian tradition of double-cooking with fat.

Method

    Preheat oven to 210°C (410°F).

    Halve the potatoes if larger than a walnut. Pat completely dry — wet potatoes steam instead of crisping.

    Toss with 3 tbsp of the olive oil, salt, and pepper in a heavy roasting pan.

    Strip half the rosemary leaves and scatter over the potatoes. Tuck in the whole sprigs and the garlic cloves.

    Roast 30 minutes, turning once halfway.

    Drizzle with the remaining oil and roast another 10–15 minutes until deeply golden.

    Discard the woody rosemary stems. Serve immediately.

Notes & variations

Fresh rosemary is essential — dried burns and turns acrid at this temperature. If you want extra crisp, parboil the potatoes 8 minutes first, then shake in the colander to rough up the edges before oiling.
