Infusion defined

Water extraction by steeping.

The definition

Preparation method where leaves, flowers, or aerial parts are steeped in hot water (5-15 minutes typically). Used for delicate plant material containing volatile oils that would be lost by simmering.

Mechanism

Hot water extracts water-soluble actives without volatilising delicate compounds. Covered infusion preserves aromatic oils.
