Astilbe thunbergii, a perennial plant native to Japan and the Kuril Islands, is known for its light and airy plumes of flowers and edible leaves. This plant thrives in moist conditions and prefers partial sun or shade, making it suitable for garden beds where water retention is good. With a hardiness range from zones 4-9, it can grow up to 0.5 meters tall and spread to about 0.45 meters wide.
