Fresh ginger, lemon and honey tea

Method

    Peel the ginger with the edge of a teaspoon (skin comes off cleanly). Slice thinly across the grain — thin slices give up their oils faster.

    Bring the water to a boil in a small saucepan. Add the ginger, reduce to a simmer.

    Simmer covered 8 minutes for a mild tea, 12 minutes for a strong, spicy brew.

    Strain into two mugs.

    Stir the honey and lemon juice into each mug — add honey off the heat to preserve its enzymes.

    Sprinkle a pinch of cayenne on top if you want extra warmth.

Notes & variations

Do not add honey to boiling water — it kills the beneficial enzymes and can turn slightly bitter. Ginger tea is safe during pregnancy in moderate amounts (up to 1 g dried root/day equivalent).
